The Tontine Hotel is set in the heart of the historic town of Peebles in the Scottish Borders, with the vibrant High Street on our doorstep and beautiful views of the River Tweed to the rear. We are a locally run business committed to providing warm and welcoming hospitality to all our guests.

Nestled in the heart of Peebles in the Scottish Borders, our boutique hotel boasts a charming bistro and an elegant à la carte restaurant, both dedicated to showcasing the finest local produce. From comforting classics in the bistro to refined dining experiences in the restaurant, we aim to create unforgettable flavours that celebrate Scotland’s rich culinary heritage.

As our Head Chef, you will:
• Curate seasonal menus highlighting the best ingredients from local farmers, fisheries, and artisan suppliers that tell a story of seasonality, sustainability, and true Scottish hospitality.
• Lead a passionate kitchen brigade, inspiring creativity and excellence in every dish.
• Oversee kitchen operations, ensuring seamless service in both the bistro and à la carte restaurant.
• Maintain the highest standards of presentation, flavour, and hospitality.
• Uphold sustainability, ethical sourcing, and innovative food preparation techniques.

Who We’re Looking For:
• Experienced Head Chef or Senior Sous Chef with a track record in fine dining.
• A deep understanding and love for Scottish cuisine and its seasonal ingredients.
• Exceptional leadership skills—capable of mentoring and motivating a dynamic kitchen team.
• Strong knowledge of kitchen management, budgeting, and supplier relationships.
• A creative flair for balancing comfort and refined dining.
