Job description: | A proactive, hands on B & C Manager to lead a young team. As the B & C Manager you will ensure the efficient day-to-day running of clubhouse services, with the role being critical in maintaining a welcoming, first-class experience in the clubhouse. To be effective you much engage with all club employees, members and visitors to ensure that consistently high levels of service are always maintained. Responsible to: The Club Manager KEY RESPONSIBILITIES Hospitality • Set service standards in the clubhouse, delivering a friendly, courteous & proactive bar & catering service to all club members & visitors • Monitor & uphold bar & catering service standards to ensure they are being met. • Manage & welcome golf outings & other visitors, making sure they are aware of arrangements made for them. • Regularly review processes & procedure to ensure continual service improvement • In conjunction with the Head Chef, continually review bar & catering menus. Financials • Monitoring budgets/targets weekly in meetings with Head Chef & Club Manager & achieving monthly targets for bar & kitchen as per the budget. • Discussing sales figures weekly/against budget/YTD figures from previous year Staff Management • Lead team by example • Manage staff absences • Manage the clubhouse bar staff, including staffing levels, recruitment, training, performance, discipline & annual reviews • Work closely with the Head Chef in relation to all club functions, outings & and corporate events to agree menus & prices. • Organise staff rotas to ensure suitable staff cover • Establish good relationships with the kitchen staff, the Club Pro, G & H Convenor, Finance Convenor, ladies and senior reps • Organise monthly meetings with bar staff to discuss product knowledge, new products, menus. • Train Team Leader on ordering bar stock; doing weekly rotas, to be able to manage effectively when B & C Manager on holiday/absent Cellar & Bar • Manage the cellar & maintain bar stocks, purchasing stocks at competitive prices and continue to source best prices, consistent with good value & timely delivery so that the club does not run out of products, or hold excess stock. • Ensure stocks are available for inspection by club’s stocktaker on regular basis • Manage suppliers to optimize profitability • Responsible for results of monthly stocktakes to achieve between 60- 65%GPM. • Be a Personal License Holder • Recommend changes to service levels &/or suppliers where products/performance is unsatisfactory and a better value supplier can be identified. Health & Safety • Create & maintain active action plan to ensure staff compliance with H&S requirements, food Hygiene (Peninsula H&S check). This role presents a real opportunity to promote & develop the clubhouse services with the membership and guests/visitors within a progressive, friendly & non aggressive environment. The B & C Manger is an ambassador for the club’s services & represents the club to all visitors and is a role model for how service will conducted. It is expected the Bar & Catering Manager will work 40 hours per week, being flexible with evenings and weekend when required and normally working opposite shifts to a Team Leader. |
